I realize that it’s already beginning to feel like spring in many parts of the country, but winter is still in full force here and we got about 7 more inches of new snow in the mountains overnight. I’m definitely not complaining – warmer weather will be here before we know it so right now I’m savoring every snowflake while its lasts. I wanted to post our menu for the week before we head up the slopes to enjoy today’s fresh powder. These hearty meals should take off the winter chill and warm the soul.

Mmmmm. This is a fantastic week! I’m definitely making your Sunday recipe at some point! And that sandwich looks ridiculously awesome.
Our kind of sandwich!! Love anything with eggs in it!!
Hey there! Up at 1:00 in the morning the other night waiting on a heifer to calve so I made a menu plan from some of your stuff – I picked about 4-5 of them. Made my list and went to the store last night. Trying the Scallops tonight. Thanks for the inspiration – will let you know how it turns out. Even going to try some of the meatless meals, but do have to bug you about adding a few more menu items with some beef
haha. Hope you guys are enjoying Colorado. Ricarda
@Ricarda: Ha! Maybe you can suggest some yummy beef meals for our menu. I bet you have some! Right now I’m actually sitting at the computer making my menu for next week so that I can go to the store.
